Good 4 U Muffins

"A tasty, easy to make muffin recipe that you can make with most any fruit. This version uses peaches, but granny smith, or red delicous apples work just as well. Family, friends, and neighbor tested and approved."

  • Preheat oven to 350 degrees.
  • dice 1 medium sized peach, then sprinkle with brown sugar in a medium sized mixing bowl.
  • melt Smart Balance in microwaveable measuring cup.
  • add dry ingredients starting with the oatmeal in a food processor, pulse until blended completely.
  • add egg to milk. Pour slowly into food processor while it is running, add melted butter, then scrape down sides and bottom as soon as the mixture smooths out. pulse again for about 15 seconds to complete mixing.
  • Pour batter onto peach slices and brown suger mixture, then fold the mixture completely.
  • put about 1 heaping tablespoon of peach batter into a greased muffin tin.
  • bake at 350 degrees for about 25 minutes or until golden.

I know that using a nice fresh peach might make for an even more flavorful muffin, but the best I had were frozen peaches slices which I thawed, then diced, & followed the recipe on down after that! Still made for some very nice tasting muffins! All but four of them (kept for the 2 of us) were included with several other varieties of muffins, to lure buyers into our area during a park-wade garage sale recently! Worked, too! Thanks for sharing your recipe! [Made & reviewed for one of my adopted chefs in this Spring's Pick A Chef event]
