This cornbread is sweet and delicious, it is great with bb-q ribs and baked beans.
- 1 cup flour
- 1 cup cornmeal
- 2⁄3 cup sugar
- 1 teaspoon salt
- 3 1⁄2 teaspoons baking powder
- 2 eggs
- 1 cup milk
- 1⁄3 cup vegetable oil
- 1⁄3 cup honey
- Preheat oven to 400 deg.
- Combine all ing. in mixing bowl and mix with electric mixer for about 2 minute.
- Pour into greased 8-8" glass baking dish and bake for 20-25 minute or until toothpick inserted in center comes out clean.
This is my favorite cornbread recipe! I do find that the 8x8" pan is too small - you kind of have to burn it to get it to cook through. I find that a 9x13" works better - just shorten the cooktime.
This has been my go to cornbread recipe for years now! It comes out perfect every time, and my family always requests it. A COOL TIP: pour the oil in the measuring cup first, then the honey; the honey will pour out easily without a drop left.
I cut this recipe in half and made a small pan just for me...really enjoyed the addition of the honey. Went well with my chili. Thanks!
