- 453.59 g chicken feet
- 1892.0 ml oil
- 1892.0 ml water
- 28.34 g fresh ginger
- 3 piece star anise
- 56.69 g chinese parsley roots
- 56.69 g maltose sugar

Marinade
- 29.58 ml oyster sauce
- 14.79 ml sugar
- 29.58 ml soy sauce
- 14.79 ml sake
- 28.34 g chopped chili pepper
- 2 garlic cloves, minced
- 2.46 ml white pepper
- 14.79 ml black bean sauce
- 2.46 ml sesame seed oil
directions
- Wash feet, chop off toenails and cut into quarters.
- Heat oil to 350 degrees. Mix chicken feet with maltose and fry until golden brown, about 7 minutes. Remove and drain.
- Boil water and add ginger, star anise and parsley roots. Add feet. Bring to boil again, then reduce heat and simmer 90 minutes. Drain.
- Combine marinade ingredients. Marinate feet 24 hours. Before serving, steam feet, marinade 15 minutes. Serves 3.
