These healthy potatoes are tasty and light as a feather.
- Peel and quarter the potatoes. Place them in a heavy 2-qt sauce pan that has a tight fitting lid.
- Add the carrot, water and tamari sauce.
- Cover and simmer until the vegetables are quite soft. Remove from the heat but do not drain.
- Add the oil and whip with electric beaters or a potato masher. If necessary, add a little more water to moisten.
