  • 6 large red potatoes
  • 1 carrot, sliced
  • 1 cup water
  • 1 teaspoon gluten-free soy sauce
  • 1 tablespoon oil

  • Peel and quarter the potatoes. Place them in a heavy 2-qt sauce pan that has a tight fitting lid.
  • Add the carrot, water and tamari sauce.
  • Cover and simmer until the vegetables are quite soft. Remove from the heat but do not drain.
  • Add the oil and whip with electric beaters or a potato masher. If necessary, add a little more water to moisten.
