This was part of a Caribbean meal my family shared tonight. I decided to cube my potatoes and bake them in the oven but I did use the ingredients listed. I used Rita's Annatto Oil. The colour of these potatoes was a lovely golden colour with a subtle flavour. Reviewed fr ZWT3
Another of Rita's great recipes - these potatoes are a delicious side dish. I wasn't able to get annatto oil here on the Gold Coast, so substituted with olive oil and a small amount of turmeric for colour. Turned out really well with just a nice touch of garlic flavour - will definitely be made again
