- 118.29 ml butter or 118.29 ml margarine
- 236.59 ml sugar
- 3 eggs
- 118.29 ml orange juice
- 236.59 ml sultana raisin
- 177.44 ml candied orange peel, diced
- 177.44 ml candied lemon peel, diced
- 177.44 ml candied citron peel, diced
- 236.59 ml coconut
- 236.59 ml nuts, chopped
- 473.18 ml flour
- 4.92 ml baking powder
- 2.46 ml baking soda
- 2.46 ml salt
directions
- Cream butter, add sugar gradually and continue beating.
- Add eggs, one at a time, beating thoroughly after each addition.
- Add orange juice, raisins, candied fruit, coconut and nuts.
- Fold in sifted dry ingredients.
- Turn into greased, double wax paper lined loaf pan and bake at 275°F for 2-1/2 to 3 hours.
- Cool in pan for 10 minutes.
- Turn out and cool completely on rack.
- Wrap in plastic wrap; store for 3-5 weeks before serving.
