- 44.37 ml sherry wine vinegar
- 4.92 ml Dijon mustard
- 1 small shallot, minced
- 1 garlic clove, minced
- 1.23 ml kosher salt
- 59.14 ml walnut oil (do not substitute!)
- 70.87 g mixed baby greens
- 59.14 ml walnuts, coarsely chopped
- 6 figs, quartered (fresh, ripe turkey figs are to die for)
- 42.52 g goat cheese
- fresh ground pepper
directions
- Combine vinegar, mustard, shallot, garlic and salt in a small mixing bowl.
- Whisk in the oil. If you have time, let flavors mingle for 30 minutes.
- In a large bowl, toss greens with the vinaigrette.
- Serve dressed greens in individual bowls or plates.
- Top with walnuts, figs, cheese and fresh ground pepper.

Delicious salad! I made this up as written (but only needed about half the dressing and a bit less cheese). I love figs and walnut oil on salad, and they did not disappoint. It needed a little more tang for my taste though, and balsamic vinegar goes so perfectly with figs, that I added a little bit over my salad. Yum!
