- 473.18 ml leeks, thinly sliced
- 14.79 ml olive oil
- 170.09 g fresh goat cheese
- 56.69 g cream cheese
- 29.58 ml milk
- 3 large egg yolks
- 4.92 ml fresh thyme
- 14.79 ml water
- 1 pie crust

directions
- Preheat oven to 350 degrees. Toss leeks with oil, and season with salt and pepper to taste.
- Mix goat cheese, cream cheese, milk, 2 egg yolks, and thyme. Season with salt and pepper. In a different bowl, whisk together remaining egg yolk with water.
- Roll out dough to a 13 in, round. Place on baking sheet. Spread goat cheese mixture on crust leaving a 2 in border. Sprinkle leeks evenly over the cheese. Fold edge of dough over filling, pinching together as needed. Brush with an egg wash.
- Bake until crust is golden brown, about 1 hour.
