Taken from a magazine article on cooking within a budget - looks fabulous if done as individual gratins.
- Place tomatoes, oil, garlic, chilli flakes, sugar, basil and salt and pepper.
- in a medium pot.
- Bring to the boil.
- Simmer for 20 minutes on low.
- Cook gnocchi in a large pot of boiling, salted water for 3 minutes or until they rise to the surface.
- Drain well, divide between 4 baking dishes, place on baking tray.
- Spoon over prepared tomato chill sauce.
- Pre heat grill, top each dish with sliced bocconcini.
- Grill 3 - 4 minutes till golden brown and serve.
I made this as described, a very easy dish that suited us perfectly. Personal taste, I could have done with a little more chili, but it was perfect for DH. I prepared it on the stove, plated it and popped the plates under the grill to brown, this would have made a better presentation in gratin dishes as you suggest :). This is such a wonderful and easy recipe to make, I mae with a tomato ravioli and it worked out so well.
I followed the rest of the recipe as written, although my bocconcini did not melt down really well, so I think I may have needed more as I used a larger dish not individual ones.
The bocconcini gave a lovely cream texture to the dish though and I loved just that hint of chilli, and I am not a chilli fan, so this was amazing for me.
A lovely dish to serve the family, the family loved this and next time I will make individual ones, and they will be even more impressed.
Very tasty dish and so easy to make. I am so thankful we can now buy already made gnocchi. I did not use the grill; however, I baked them in the oven and they were delicious. Thanks for the post. Made for Everyday is a Holiday tag.
