The taste is delicious but it comes out quite moist almost like a pudding.

  1. Preheat oven to 350°F.
  2. Grease 9x5 loaf pan.
  3. Combine oil, sugar.
  4. Add eggs, vanilla applesauce & beat.
  5. Add flours, baking powder, xantham gum, salt, and cinnamon.
  6. Stir in zucchini, nuts and raisins.
  7. Bake for 1 hour.
