Recipe from Cooking Free. Keep this in the refrigerator to sprinkle on muffins or cakes before baking.
- 2 tablespoons brown rice flour
- 1⁄4 cup sugar
- 1⁄2 teaspoon cinnamon
- 1⁄4 cup pecans, chopped
- 1 tablespoon canola oil
- combine thoroughly.
- sprinkle on top before baking.
I used this and Recipe #242718 to make Recipe #242621. I also added some apples, cinnamon, and pecans to the muffin mix. They were delicious. Moist and tender, but I used paper cupcake cups and they stuck something fierce. Next time I'll just grease the pan well.
