Gluten-Free Pretzel Cookies

ingredients
- 118.29 ml butter, softened
- 118.29 ml sugar
- 1 egg
- 29.58 ml corn syrup
- 236.59 ml sweet rice flour
- 118.29 ml potato starch
- 118.29 ml light stoneground buckwheat flour
- 4.92 ml gluten free baking powder
- 0.61 ml salt
- 28.34-56.69 g semisweet chocolate, melted (optional)
directions
- Cream butter and sugar together.
- Beat in egg and add corn sryrup.
- Sift flour, baking powder, and salt together and add; mix well.
- Shape into 7" pencil sized ropes.
- Form into a horseshoe and bring ends down to center of rope overlapping and pressing ends forming a pretzel shape.
- Arrange on greased baking sheets, and chill for 30 minutes to help retain shape.
- Bake in a preheated 375* oven for 10 to 12 minutes.
- Dip in chocolate once cooled if desired.
- Enjoy!

5 star - WOW! This recipe was really good and exceeded my expectations. I made no or little changes to the recipe and will definitely make it again.
4 star - A very good recipe. I quite enjoyed it, but had to make a few changes here and there. All in all, it met my expectations. I will probably make it again.
