Delicious!It is much better than I thought and nice a gooey.I have really been craving these and finally found a good way to make them.I am eating one right now.

Yummy pizza snacks! I used corn tortillas instead of rice flour ones (Mission brand are gluten-free), otherwise made as directed. With a little cooking spray the tortillas cooked up nice and crispy, great with the pizza fillings and gooey cheese. Thanks for sharing your recipe! Sensational! I have only made Mexican pizza with tortillas in the oven, and really loved this stove top method. It was really quick, did taste like pizza, and curbed the pizza craving. I used tomato paste and herbs instead of pizza sauce, since that is what we had, and flipped them the first time after 2-3 minutes, turning the heat down so they wouldn't burn. This was my first time using Food for Life's GF tortillas, and they were actually tasty - head and shoulders above the last 2 brands of GF tortillas I have tried. We made three of these for two people for dinner with salad.

I often use pita bread to make pizza but I had never tried it on tortillas. It was a nice change for lunch. Made for 123 Hits Tag

These were really good. I love pizza, I love quesadillas, so it was a great mix of the two. I used regular pepperoni since I don't need it to be gluten free, but otherwise made as directed. This would be great kid food, but is great for adults too ;) Made this for a light lunch. Thanks for sharing!

The kids and I loved these for lunch. I didn't have any pepperoni but my oldest said he thought they would be better with it. I really didn't measure the pizza sauce or cheese. I just put the amount on I thought we would like. I will be making these more often.

Yuuummm! We are dairy-free too, so I had to use a soy cheddar cheese which I processed into a paste to spread it on the base with the sauce. I also used some salsa, grated coleslaw veges, BBQ chicken, and some pepperoni. I had some tortilla-style bases made from buckwheat/soy/rice and they worked great. SO good to have a quick pizza fix (mine ended up being a leftover mix but still...)that also doesn't fall apart! Thank you!!
