This is my easy gluten free pancake recipe. No hassle and easily adaptable for all your favorite pancakes, whether it be cinnamon or chocolate chip. Enjoy!
- 1 1⁄4 cups rice flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 1⁄4 cups milk
- 2 eggs
- 1⁄4 cup olive oil
- Add the vegetable oil to milk.
- In large bowl, mix together all dry ingredients.
- Add the milk/oil mixture and eggs.
- Mix and cook on hot griddle.
I used rice milk instead of milk. There is nothing cakey (i.e. sweet) about these and they fall apart when you try to flip them. They are edible, though.
I've made these twice, once with milk and once with water, both were good. I think I like using just a bit less liquid than called for to make them a little thicker. The taste is great though!
Really good recipe!!! Next time will put less baking powder and soda, as it gives a bit chemical and overpowering taste. Perfect for people looking for gluten, wheat, dairy (if using soy or rice milk) free yummy goodies!!!
