  • Soak breadcrumbs in milk until absorbed.
  • Finely chop green bell pepper and onion.
  • In a large bowl, add all remaining ingredients and mix well.
  • Add soaked breadcrumbs and mix well.
  • Shape into small loaves, approximately 4 ounces each.
  • Place on baking sheet covered with foil and sprayed with oil.
  • Top each loaf with some catsup, parmesan cheese, and basil.
  • Bake at 350 degrees for 45 minutes or until browned.
  • Can also be made into meatballs. Both meatloaves and meatballs freeze well.
