- 3⁄4 cup gluten-free breadcrumbs
- 1 cup rice milk
- 1 lb ground turkey
- 1 teaspoon basil
- 1⁄2 teaspoon salt
- 1 teaspoon garlic salt
- 1⁄2 teaspoon black pepper
- 1⁄4 cup parmesan cheese
- 1⁄2 cup green bell pepper
- 1⁄4 cup onion
directions
- Soak breadcrumbs in milk until absorbed.
- Finely chop green bell pepper and onion.
- In a large bowl, add all remaining ingredients and mix well.
- Add soaked breadcrumbs and mix well.
- Shape into small loaves, approximately 4 ounces each.
- Place on baking sheet covered with foil and sprayed with oil.
- Top each loaf with some catsup, parmesan cheese, and basil.
- Bake at 350 degrees for 45 minutes or until browned.
- Can also be made into meatballs. Both meatloaves and meatballs freeze well.
