Light and tasty muffins; hard to tell they don't have gluten! Recipe adapted from one found on a GF baking website.
- Sift together flours, spices and soda. Set aside.
- Beat Stevia, Ghee, molasses and egg in large bowl.
- Add dry ingredients, stir.
- Add 1/4 c hot water and mix well.
- Pour into lined muffin tins. Bake 20 to 25 minutes at 350.
