Gluten Free Gingerbread Muffins

Light and tasty muffins; hard to tell they don't have gluten! Recipe adapted from one found on a GF baking website.

  1. Sift together flours, spices and soda. Set aside.
  2. Beat Stevia, Ghee, molasses and egg in large bowl.
  3. Add dry ingredients, stir.
  4. Add 1/4 c hot water and mix well.
  5. Pour into lined muffin tins. Bake 20 to 25 minutes at 350.
