Gluten Free Chocolate Chip Peanut Butter Cookies

"These are a variation on Bette Hagman's Flourless Peanut Butter Cookies from the Gluten Free Gourmet. I love chocolate and peanut butter, so I experimented a bit and came up with these easy, fast, and delictable cookies. Don't be scared about the lack of flour - these cookies are a favorite of celiacs and non celiacs alike!"

  • Preheat oven to 375.
  • Mix all ingredients together in a mixing bowl. Place 1 T (about one spoonful) of dough about 2 inches apart on ungreased cookie sheet. Cook for 15-20 mins, depending on your oven and altitude.

I'm a cook by neccesity - I was diagnosed with celiac's disease about 4 years ago. I also am allergic to dairy, so I've had to really experiment and figure out how to feed myself. Not only how to feed myself, but to make my food palatable for my husband, so I'm not cooking 2 meals for dinner. These days, I love cooking and experimenting with recipes to make them not only gluten free, but tasty as well.
