  • Line a baking sheet with edible rice paper.
  • Using Electric Mixer: place almond meal in bowl of electric mixer along with the sugar. Mix on low speed until very fine. Add the egg whites and mix well. Continue mixing the dough until very smooth, about 3 to 4 minutes.
  • Fill the pastry bag with the almond mixture. Pipe mounds onto the rice paper, spacing about 1 inch (2.5 cm) apart.
  • Bake for 15 minutes, or until the cookies have risen slightly.

i've been on a gluten-free, wheat-free & lactose-free diet for around 7 years now. both my mum and my brother also follow the same diet as we are all intollerant to gluten & lactose.cooking is one of my passions but unfortunately having to find recipes both gluten & lactose free is no easy task.i therefore try to make up my own versions.i come from an island in the mediterranean where most of our cuisine centres around pasta, breads etc...which neadless to say DOES NOT help at all! but anyway..this site was an enormous help!
