This meatloaf is firm and very flavorful. Leftovers make a great night time snack!

  1. In microwave-safe dish put soup base, onion, green pepper, and garlic with water and cook on high for 5 minutes.
  2. Remove and let cool. Mix all ingredients together very well except diced tomatoes and the jars of salsa.
  3. Place the meatloaf mixture in an oven proof baking dish and form into a loaf.
  4. Pour diced tomatoes and the salsa over top of the meatloaf.
  5. Cover and bake in a 350° oven 1 1/2 hours.
  6. Let stand 5 minutes before slicing.
