Glorified Rice

"I am posting this recipe in response to another member's search for a yummy dessert made with rice, fruit and whipped cream. A good use for leftover cooked rice."

• Ingredients: 7
• Serves: 6-8

ingredients

• 1 cup cooked rice, cooled
• 1⁄3 cup granulated sugar
• 1 (13 1/2 ounce) can crushed pineapple, drained
• 1⁄2 teaspoon vanilla
• 1⁄3 cup miniature marshmallow
• 2 tablespoons maraschino cherries, drained and chopped
• 1 cup heavy cream, whipped

directions

1. Mix together the rice, sugar, pineapple and vanilla.
2. Stir in the marshmallows and cherries.
3. Fold in the whipped cream.
4. Refrigerate until ready to serve.

My mom use to make a similar glorified rice that I loved as a child but she always mixed in strawberry/banana jell-o,no cherries and not always but sometimes the mini marshmallows,otherwise the same..rice, pineapple,whipping cream(the real stuff) I could never get enough of it,so glad this recipe in one version or another is still living on,YUMMO!

This was really good. I substituted fruit cocktail for the pineapple and used cool whip instead of whipped cream, as that is what i had on hand. A nice creamy dessert. Thanks!

I've been wanting to try this for awhile. It combines all my favorites: rice pudding and ambrosia! It was just as "glorious" as I expected. I ended up using about 1 1/3 cup rice, which was plenty creamy. I was surprised that no one had reviewed this yet. Try it, you'll love it! Roxygirl
