We had these all the time growing up.
- 1 lb ground beef
- 4 green peppers
- 1 1⁄2 cups rice, cooked
- 1⁄4 cup onion, chopped
- 1 1⁄2 teaspoons salt
- 1⁄4 teaspoon pepper
- 12 ounces tomato sauce
- Mix meat, seasonings, onion and rice with 1/2 of tomato sauce.
- Cut peppers in half and stuff and place in a baking dish.
- Pour remaining tomato sauce over peppers.
- Cover tightly with foil.
- Bake @ 350 for 1 hour (Check in 30 minutes and add a little water if needed).
