I liked that at first bite you tasted the sweetness of the vinegar then came the tart flavor as it reached the back of your mouth. This was very good and I think it might go well with a beef or a pork roast. Thank you for posting. I made this for the 1-2-3 Hit Wonders game 2007
This tasty dish was quick and easy to make. I used green and yellow zucchini. The flavour was very nice. It was really good served with steamed basmati rice and roasted pork tenderloin. This was an interesting way to serve zucchini and squash, thanks for sharing Kizzikate.
This had a very nice flavor but didn't quite work for me. The only squash available to buy was larger than normal and filled my medium pot to the brim. I think they had too much water of their own because I couldn't get the liquid to boil down before the squash turned mushy. I think next time I'd use a skillet and no extra water and I wouldn't cover it. We enjoyed this with rice. Made for 1-2-3 hit wonders.
I thought this recipe was so unique! I used 2 green zucchini and 2 butternut squashes, and it came out fabulous! It's a great way to serve up health food for the family. Next time, I may try it over rice and turn it into a full side for a chicken meal.
An excellent vegetable side dish. The balsamic vinegar plays up the summer squashes very well and the oregano is a lovely accent. I just started my oregano seedlings last week and was happy to be able to harvest enough leaves from that to substitute for the dried.
