Glazed Vegetable Stir-Fry

  1. In small bowl, combine sugar, lemon zest, lemon juice, soy sauce, water and cornstarch, and set aside.
  2. Heat oil over high heat in large, non-stick skillet.
  3. Add broccoli and red pepper, stir-fry for two minutes.
  4. Add jicama, and continue to cook until vegetables are crisp-tender.
  5. Pour liquid mixture over vegetables and cook until thickened.
  6. Thoroughly coat vegetables with glaze, garnish with additional lemon zest and serve.

Delicious, We loved the nice lemon flavor. I added some snow peas along with the other veggies. This is an easy fast cooking dish. I will be making It again and again.

Super quick and easy and had a nice light, fresh flavor. I think I would cut back on the sugar by half next time and only make half the amount of sauce, that would make it perfect for us. Thanks for sharing the recipe.
