Glazed Spam and Sweet Potatoes

  • Boil sweet potatoes for 30 minutes or until cooked; drain.
  • Meanwhile, make raisin sauce. Mix brown sugar, water, raisins, vinegar, Worcestershire sauce, salt, 1 tbsp butter, jelly, and cloves in a saucepan. Boil for 7 minutes.
  • Mash sweet potatoes with milk and 1 tbsp butter. Season with salt and pepper.
  • Score top of Spam loaf in diamond pattern. Place in a shallow baking dish and spoon the sweet potatoes around it.
  • Bake at 350 for 20-25 minutes, basting loaf several times with raisin sauce.
  • In the last five minutes of cooking, arrange marshmallows on sweet potatoes and allow to brown.

  1. I had a can od spam I was looking to dress up one night so I tried this recipe. The sauce is VERY VERY sweet, but that wasnt the biggest issue, it was that it didnt really glaze the loaf at all, and just ran into the sweet potatoes and I had to use a baister to pull it out of them and we had to dip peices of spam in the sauce on our plates. Maybe if I boil it for even longer it will thicken up enough to stick to the loaf, but I think maybe chopping or slicing the spam and cooking in a shallow pan without the sweet potatoes might be better, Id also cut the brown sugar and jelly both in half next time
