  • In deep 12-inch skillet over high heat, heat 1 inch water to boiling.
  • Add onions; heat to boiling.
  • Boil 1 minute; drain.
  • Peel onions, leaving a little of the root ends to help hold shape during cooking.
  • In same skillet over high heat, heat 1 inch water to boiling.
  • Add onions; heat to boiling.
  • Reduce heat to Low; cover and simmer 5 to 10 minutes until onions are tender; drain.
  • Wipe skillet dry.
  • In same skillet over high heat, cook onions, margarine or butter, currant jelly, sugar, and salt, stirring occasionally, until onions are browned and glazed, about 10 minutes.

  1. A lovely recipe that we really enjoyed. I cut out the sugar and used Apple Jalapeno jelly - They looked attractive and tasted wonderful. I will be making this recipe again. 5 Dec 09 I made the recipe again using red pearl onions and again used Jalapeno jelly - Wonderful, I only boiled the onions for about 3 minutes and then when I glazed them had the heat fairly low and cooked them for about 5 more minutes shaking the pan frequently. Love this recipe - I will make it with current Jelly I promise
