Topped with spicy glaze these juicy, healthy mini meat loaves are an inexpensive meal that your family will love.

  1. Rinse quinoa thoroughly with hot water and cook in 1 ½ cup of water for about 20 minutes.
  2. Mix and combine until uniform ground meat, cooked quinoa, egg, bread crumbs and spices.
  3. Shape the mixture into 4 oval loaves, flatten them a little and place on a baking sheet lined with parchment paper.
  4. Brush the mini meatloaves with glaze and bake in the oven for 35 minutes at 200°C.
  5. Glaze: mix ketchup and mustard until smooth.
  6. Serve with mashed potatoes and seasonal salad.
