Glazed Chunky Apple Cake

"Got this from a co-worker years ago, and have made it quite a few times since. I stays moist for ever and the glaze is the best part. I have served it warm and cooled, and it's great both ways. It calls for cinnamon cloves and nutmeg, but I have made it with all cinnamon (because that's all I had!) and it was just as good."

  • Preheat oven to 325°.
  • In mixer bowl, mix sugar and oil.
  • Add eggs and mix till frothy.
  • Add flour, salt, soda and spices.
  • Fold in apples and nuts.
  • Pour into greased and floured 9x13 pan, and bake for 1 hour.
  • For glaze, mix all ingredients in a small saucepan. Bring to a boil and boil 2 minutes. Punch holes in warm cake with wooden skewer, and pour glaze over holes. Allow to sit till glaze sets up, and serve warm or cooled. Refrigerate leftovers.

  1. I really loved the texture of this cake, so moist and flavorful. The glaze was just wonderful also. I followed the recipe exactly except for the nuts, it came out great.
     
  2. Wasn't too sure how this would turn out, but it's wonderful! I didn't have pecans, used walnuts--they're great in this cake. I do like the cake after it has been refrigerated for several hours and has soaked up all the glaze--delicious!
