  • 1 lb carrot, cut into 1-inch pieces
  • 12 ounces carbonated lemon-lime beverage (1 can)
  • 1 tablespoon butter, unsalted
  • 1 teaspoon dill weed, dried
  • salt, to taste
  • pepper, to taste

  • Combine carrots and soda in a small saucepan over medium-high heat; bring to a boil.
  • Reduce heat to medium, cover and simmer 10 minutes.
  • Uncover and simmer an additional 10 minutes, or until liquid is almost evaporated and carrots are tender when pierced with a fork.
  • Add butter and seasonings; toss until melted.
  • Transfer to a bowl and coarsely mash with a fork or potato masher.
  • Season with salt & pepper to taste.
