Found this recipe in a Martha Steward magazine and I think Nik might like it

  1. Quarter and cut carrots into 2 inch lengths. In a skillet, bring carrots, sugar, water, butter and salt to a boil. Reduce heat; simmer; partly covered for 6 minutes. Cook uncovered over high, tossing often until tender, 3-4 minutes. Season with pepper before serving.
