  • Cook carrots in 1/4 cup salted water until tender, then drain.
  • Whisk together orange juice, nutmeg, brown sugar, cornstarch, until smooth. Pour over carrots and cook for several minutes until mixture thickens.
  • Add butter and toss.
  • Serve hot.

  2. The nutmeg and orange juice is a nice combo for these carrots. I added the zest of the orange to give it more zip. If you'd like to know 6 cups of carrots is around 2 pounds. I also made my glaze a little thicker by adding 1/2 - 3/4 teaspoon more starch. Made for the *Recipe Swap 17 game* 2008 in the Aussie/NZ forum. Our group was * Erica* Group 8
