  1. Cook carrots in 1/4 cup salted water until tender, then drain.
  2. Whisk together orange juice, nutmeg, brown sugar, cornstarch, until smooth. Pour over carrots and cook for several minutes until mixture thickens.
  3. Add butter and toss.
  4. Serve hot.

The nutmeg and orange juice is a nice combo for these carrots. I added the zest of the orange to give it more zip. If you'd like to know 6 cups of carrots is around 2 pounds. I also made my glaze a little thicker by adding 1/2 - 3/4 teaspoon more starch. Made for the *Recipe Swap 17 game* 2008 in the Aussie/NZ forum. Our group was * Erica* Group 8
