  1. I already know this is a winner! My favorites "chicken salad for a crowd" also uses heavy cream and it is what makes it just delish! I am anxious to try this with the addition of cayenne, apples & pecans.

  2. I thought this was the best sandwich ever! I ate a HUGE sandwich too! I mixed everything up and helped measure the ingredients! Thanks Jen Rickmann

  3. This is a great Chicken Salad Recipe. Our 5 year old, BOY, absolutely LOVED this chicken salad and had two sandwiches. However the adults thought it needed something to bring it over the top. I would love to add fresh herbs to this recipe! The heavy cream idea is just AWESOME! This is a great entry! Good Luck Chef!

  4. Loved it.

  5. Very good chicken salad! I added some chopped scallions and some fresh chopped parsley to add a little extra flavor. I also used 1 whole apple....I think the apple really makes this salad terrific. The heavy cream makes this nice and creamy and rich, but if you're watching your fat, I think you could skip it. Thanx for posting and good luck!

Tweaks

  1. This is so good. I added just a couple of ingredients to enhance the flavors: 1/8 tsp beaumonde, 1/8 tsp white pepper along with the lemon juice and cayenne. I’m following Keto so I instead of adding fruit, I added just 1/2 tsp honey which is minimal carbs/sugar per serving. Delightful!
