A nice and mellow peanut butter sauce that's quick and easy to make, with a little tang of ginger. Great for springrolls.
- 1⁄4 cup peanut butter (natural, salted)
- 3 tablespoons hot water
- 2 teaspoons maple syrup (or other liquid sweetener)
- 1⁄2 teaspoon rice vinegar
- 1⁄2 teaspoon soy sauce
- 1⁄2 teaspoon ginger (freshly pressed, mostly juice of)
- Stir all ingredients together until well combined. Add more fresh-pressed ginger if desired.
