Gingery Oatmeal Molasses Bread

- 2 cups milk
- 1⁄2 cup water
- 1⁄2 cup molasses
- 1⁄4 cup butter
- 5 1⁄2 - 6 cups flour
- 1 cup whole wheat flour
- 1 cup oats
- 2 tablespoons brown sugar
- 3 teaspoons salt
- 1⁄2 - 1 teaspoon ginger
- 1⁄2 ounce yeast, 2 packages
directions
- In medium saucepan, heat first 4 ingredients until very warm, not boiling. Spoon flour into measuring cup, level off.
- In large bowl, combine warm liquid, 2 cups all-purpose flour, wheat flour, and remaining ingredients. Beat 2 minutes at medium speed. Stir in remaining all-purpose flour. On well-floured surface, knead dough until smooth and elastic. Place in greased bowl. Cover and let rise until doubled in size (45 to 60 minutes).
- Grease two 9 x 5 loaf pans. Punch down dough and divide into two loaves. Place in greased pans. Cover and let rise until doubled (45-60 minutes).
- Heat oven to 350°F
- Bake 35-45 minutes or until deep golden brown and loaf sounds hollow when tapped. Immediately remove from pans. Brush with butter, if desired.
