Gingery Oatmeal Molasses Bread

"Another great recipe from "Prize Winning Recipes". The thing that I love about cookbook is that every recipe is (literally) a winner. My suggestion is to use the whole teaspoon of ginger. This bread is wonderful in texture and subtle taste. Goes great with stew!"

  • In medium saucepan, heat first 4 ingredients until very warm, not boiling. Spoon flour into measuring cup, level off.
  • In large bowl, combine warm liquid, 2 cups all-purpose flour, wheat flour, and remaining ingredients. Beat 2 minutes at medium speed. Stir in remaining all-purpose flour. On well-floured surface, knead dough until smooth and elastic. Place in greased bowl. Cover and let rise until doubled in size (45 to 60 minutes).
  • Grease two 9 x 5 loaf pans. Punch down dough and divide into two loaves. Place in greased pans. Cover and let rise until doubled (45-60 minutes).
  • Heat oven to 350°F
  • Bake 35-45 minutes or until deep golden brown and loaf sounds hollow when tapped. Immediately remove from pans. Brush with butter, if desired.
