- 680.38 g beef flank steak
- 297.66 g can beef consomme or 297.66 g can condensed beef broth
- 59.14 ml soy sauce
- 4.92 ml fresh ginger, grated
- 1 garlic clove, crushed
- 1 bunch green onion, sliced diagonally into 1-inch pieces
- 44.37 ml cornstarch
- 29.58 ml water
- 113.39 g sugar snap pea
- 354.88 ml fresh bean sprouts
- 473.18 ml cooked rice
directions
- Thinly slice flank steak diagonally across the grain.
- In a slow cooker, combine steak, consomme, soy sauce, ginger, onions, and garlic.
- Cover and cook on LOW 5-6 hours or until steak is tender.
- Turn control to HIGH.
- Dissolve cornstarch in water in a small bowl and stir into cooker.
- Cover and cook on HIGH 10-15 minutes or until thickened.
- During the last 5 minutes, drop in vegetables and re-cover.
- Serve over rice.

My problem eater scarfed this up and asked for more, and I've rated it on that basis. For me, this was a little bland. I used skirt steak, which was excellent and in my area less than half the price of flank steak. I think next time I'll wait to put the green onion tops until the very end, and also add a little more fresh ginger, possibly some red pepper flakes. Also, I have a small crockpot and this amount barely filled it up halfway. It was quite tender after 4 1/2 hrs. If you have a larger crockpot, you will really want to watch the time. The bean sprouts did not look great, so I subbed spinach, which worked beautifully. Definitely a recipe worth playing around with again.

I moved from Ohio to the West Coast about 4 years ago and I currently work as an assistant at an intellectual property law firm in Silicon Valley.
I love to cook and experiment in the kitchen. I'm not much of baker, though, since I hate to measure my ingredients. Like most everyone else these days, I am always on the lookout for low-calorie recipes. I recently married and I try to cook dinner for my husband and I at least 6 times a week, which he heartily supports.
When I'm not cooking or browsing through cookbooks from the library or second-hand store, I can usually be found knitting something, playing video games with DH, or just watching tv. I also love exploring the great outdoors, whether it be hiking, kayaking, biking, or just doing a little sightseeing around town. I am finishing up a paralegal certificate at the community college and am now considering preparation for law school. The crockpot recipes here definitely helped us stay fed while I was taking night classes!
