Forgiven - - this will be served at Thanksgiving time this year! I tried it last night and it was delicious. I'm not patient though, so instead of baking the sweet potatoes in the oven, I wrapped them in saran wrap and microwaved them for 8 minutes and voila!---I was ready to whip them up. These were great! Loved the crunchy caramelized sugar on the top. I used vacuum-packed canned potatoes instead of fresh to save time. Added a couple extra Tbsp brown sugar in the mixture & on top (I like *sweet* potatoes!) Used orange zest instead of lemon and cut the coriander to 1/4 tsp. Realized after adding 1 tsp ground ginger that I'd read the recipe wrong so added 1/2 tsp fresh ginger as well. This was a great version of sweet potato casserole. Thanks Chef Mommie!
