Didn't have any fresh mint, so had to omit that ingredient. Still, it was a lovely, quick salad, redolent of ginger and garlic. Not sure there would be enough for four people, although certainly for three; the two of us finished it off proper!

  1. Halve the cucumbers lengthwise and scrape out seeds.
  2. Slice into ¼ inch slices.
  3. Combine with remaining ingredients and toss to combine flavors. Garnish with mint before serving.
