I found this recipe in the South Beach Diet book and wanted to add it to my cookbook. Have not tried it yet.

Directions

  1. Combine the lemon juice, ginger, pepper, and garlic in a small bowl.
  2. Place the chicken breasts in a bowl.
  3. Pour the ginger mixture over the breasts, turning once to coat.
  4. Cover, and refrigerate for 30 min up to 2 hours.
  5. Spray a large nonstick skillet with cooking spray.
  6. Heat the skillet on medium high until hot.
  7. Add the chicken.
  8. Cook, turning once until tender, about 8 minutes.

Excellent meal and very easy to make. This would also be a wonderful dish to grill and then serve on a bed of salad with a lemon dressing!

Nice and gingery and peppery! it has quite a nice bite, we loved it and it was soooo easy to put together and quick to cook. I will be making this again, thanks for posting.

This came out nice, just seemed to be missing something for my personal taste, i added 1/2 tsp of honey and 1/2 tsp of rosemarry, we enjoyed it that way serving on a bed of tomatoes and green peppers, thanks for sharing :)
