I was looking for a refreshing fruit salad and love the combination of blueberry and Cantaloupe! This recipe comes from blueberry.org
- 1⁄2 tablespoon honey
- 1 tablespoon fresh lime juice
- 1⁄2 teaspoon lime zest
- 1⁄8 teaspoon ground ginger
- 2 cups blueberries
- 1 cup diced cantaloupe
- In a large bowl combine honey, lime juice, lime peel and ginger until well blended. Add blueberries and cantaloupe. Toss to coat.
- Serve at room temperature or chilled over ice cream, pound cake, cut up fruit, etc.
Yum! I loved the tartness of the lime with the sweetness of the cantalope and blueberries! Had for breakfast, a beautiful thing! :D Made for the Best of 2008 Cookbook tag.
I can't believe how something so simple could be so tasty! The combinatin of the ginger, honey, and lime was fantastic and complemented the fruit very well. Thanks for posting this one! Made for 1-2-3 Hit Wonders Tag Game.
Delicious and so easy! I must admit I didn't measure the fruit very well - I used 1/2 cantalope and at least 2 cups of blueberries. This went great with salmon and recipe#308355 -- and tomorrow I will have the leftovers for breakfast with yogurt -- can't wait!
