Gingerbread Pancakes

ingredients
- 1 1⁄2 cups flour
- 1 teaspoon baking powder
- 1⁄4 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄2 teaspoon ginger
- 1 teaspoon cinnamon
- 1 egg
- 1 1⁄4 cups milk
- 1⁄4 cup molasses
- 3 tablespoons vegetable oil
- lingonberry preserves (optional)
directions
- In a small bowl, stir together flour, baking powder, soda, salt, ginger and cinnamon. Set aside.
- In large bowl, beat together egg and milk.
- Stir in molasses, then oil.
- Add flour mixture and stir just until combined.
- Pour a quarter cup of batter per pancake onto griddle.
- Cook on first side until puffed, full of bubbles and dry looking around edges.
- Turn and cook until second side is browned.

Loved these pancakes, most definitely, & will be happy to make them again, hopefully to share with company! Am also a big fan of cinnamon so was generous with my measurements there! I really enjoyed these pancakes. It was a nice change. I didn't have any ground ginger so I used about a tablespoon of fresh grated. They did burn easily so I had to lower the heat and keep an eye on them. The only thing that kept me from giving them a 5 star was the fact that my BF didn't like them. He says that pancakes are something that you just don't mess around with. Well, I don't agree. They were great. Thank you.
