- 1 3⁄4 cups flour
- 1⁄2 cup sugar
- 2 teaspoons baking powder
- 1⁄4 teaspoon baking soda
- 1 teaspoon ginger
- 1⁄2 teaspoon cinnamon
- 1⁄4 teaspoon salt
- 1 finely chopped apples or 1 pear
- 1⁄3 cup milk
- 1⁄4 cup oil
- 1⁄4 cup molasses
- 1 egg
- Preheat oven to 375 degrees F.
- Place cupcake/muffins papers in muffin pan.
- Mix dry ingredients.
- Add chopped fruit.
- Mix wet ingredients and add to dry.
- Mix well.
- Spoon into muffin papers until 2/3 full.
- Bake for 20 minutes or so.
A very good muffin. Recipe works fine. For my taste, I did make a few changes: I used whole wheat flour, and two apples. Next time I will cut the molasses just a little, add three apples (I like lots of apples!) and a bit more spice. This is absolutely typical of me, I usually like less sugar and more spice than most recipes have.
Yummy muffins! A great addition to my Thanksgiving. The pear and ginger flavours were quite harmonious. Next time, however, I might add a bit more sugar (and make it brown) to add some tenderness. I made these into mini muffins and got 28. Very tasty, thanks for posting!
Sorry, seemed quite bland to me. Maybe I needed to double the spice.
