  • Stir together dry ingredients.
  • Add wet ingredients.
  • Mix only until batter is lumpy.
  • Pour into muffin pans.
  • Bake at 350 for 20 to 30 min until set.
  • Let cool.

  1. These were marvelous! Had no apple juice, so I subbed milk and did half oil, half applesauce (didn't have as much as I thought!). I think these will be a new favourite, especially for Christmas morning! Made for PAC Spring '12
     
  2. My four children loved your muffins and so did i.I did add 1 tsp.of cinnamon and switched milk for apple juice.We love to eat these after swimming in the ocean. thanks so much for the healthy recipe.
     
  3. While the directions are somewhat lacking, these turn out beautifully. The flavour is perfect for a muffin. Not too strong, not too mild. I made 12 muffins but they turned out kind of small. Next time, I will fill the muffin cups. I think I would be able to get 9 good sized muffins then. The texture is wonderful as well. Thanks for posting!
