Hi, thanks so much for sharing this recipe. I loved the combo of seasonings it asked for--I upped the cinnamon to 3/4 tsp but kept the other amounts the same. At first I used melted butter for the applesauce/oil--but my neighbor (who was kind enough to try it for me) said it was a bit crumbly but the flavor was great. So I baked for a friend & made it as written--and reduced the cooking time by about 5 minutes. I removed the bread right away once it was done cooking. I was also more careful not to over mix the batter as instructed. I have not gotten feedback from my friend but I think it's improving for sure! UPDATE: after making this a few more times--I reduced the baking time by 5 more minutes & upped the oil AND applesauce amount to 1/3 cup. I got comments that it was still slightly dry but the flavor was wonderful. I think adding extra liquid & reducing the baking time (again) should hopefully do the trick!

  1. Preheat oven to 350°F Grease a 9x5 loaf pan.
  2. Sift together flours, baking powder, ground ginger, baking soda, salt, and spices.
  3. Whisk together milk, molasses, oil, applesauce, eggs, brown sugar, and grated ginger (if using).
  4. Fold liquid mixture together with flour mixture, taking care not to over-mix.
  5. Pour batter into prepared pan. Bake for about 1 hour.
