Add carrots, cauliflower, red onion, bean sprouts or any seasonal vegetables to this easy stir-fry, or just enjoy the courgettes with a main meal!


  1. In a non-stick frying pan, heat oil over medium-high heat; stir-fry courgette, onion and ginger for 1 minute.
  2. Add 1 tbsp water; cover and steam for 1 to 2 minutes or until tender-crisp, adding more water if necessary to prevent scorching.
  3. Stir in soy sauce and oil.
  4. Season with salt and pepper to taste.
