Directions

  1. Combine icing sugar, flour and ginger.
  2. Cut in butter.
  3. Mix together with your hands, as per a pie crust. When mixture holds together work in candied ginger.
  4. Press into an ungreased 9-inch square pan, about 1/2-inch thick.
  5. Prick through to bottom of the dough with a fork.
  6. Bake at 300 degrees F for 50-60 minutes.
  7. While warm, cut into desired shapes.
