Ginger Salad Dressing

"Delicious! Not just for salad, it makes a great dip for fresh spring rolls, too!"

• Serves: 6

ingredients

• 1⁄2 cup scallion, minced (green onions)
• 1⁄2 cup peanut oil
• 1⁄3 cup rice vinegar
• 2 tablespoons water
• 2 tablespoons fresh ginger, minced
• 1 tablespoon celery, minced
• 2 tablespoons ketchup
• 4 teaspoons soy sauce (I prefer low-sodium)
• 2 teaspoons sugar
• 3 teaspoons lemon juice
• 1⁄2 teaspoon garlic, minced
• 1⁄2 teaspoon salt
• 1⁄4 teaspoon pepper

directions

1. Puree all ingredients in a blender or food processor.

This was excellent as a very different dressing for cole slaw. A definite use-again, which I'll also try on other salads.
