Wonderful creamy soup with lots of good-for-you veggies! I did make a few substitutions, though. I had no cauliflower and used some chopped kale instead, and instead of PB I used macadamia nut butter (just what I had around.) The combo of ginger with the slight hint of nut butter was awesome. On the second day I added some mung bean sprouts and a little tamari. I can see this being very versatile as far as add ins. Ginger and garlic lovers - add a little extra, these two flavors really add a lot to this great soup!
This one is a keeper - very easy weeknight dinner with great lunch leftovers. (it freezes well) I also added a handful of spinach. thanks!
We've made this recipe several times, and it's really good and so easy. I like that there are few ingredients, it's not too tomato-ey. It's very good as it, and it's also really easy to add to depending on what's in the fridge, carrots are nice, bell peppers. Thanks for a great recipe!
This soup is fantastic. AND its quick! Even my 2 year old who was not hungry at all had a few spoonfuls once he had tasted it. Normally soup is a complete waste of time with him. The 5 year old also ate it without complaint. I bet this soup will be even better tomorrow...IF it lasts that long!
This was wonderful. I made the recipe as posted and it came out as I expected it to. It's not too creamy and definitely comfort food for a winter evening. The recipe makes a lot, so tomorrow I might add some sliced roasted chicken on top. Thanks so much for this "keeper" of a recipe Miel.
Delicious soup! Just perfect for fall/winter colds. The flavors blend together very well. Following other reviewers suggestions I added some spinach and some more garlic and ginger (my family loves both). Kids and adults enjoyed it alike. Thanks for a great recipe.
This soup is soooo good. I add some spinach at the very end and it makes it that much better. I don't add cayenne pepper, but do add some cumin. Either way this soup is a keeper. My non-vegan friends even said this soup kept them full :)
