This is going into my Best of 2012 Cookbook. Everything was just right! To those who think it needs to marinate longer, remember citrus will start to "cook" the fish and make it tough if left too long to marinate. Thanks for this keeper!

Ingredients Nutrition

  • 236.59 ml orange juice
  • 4.92 ml grated orange peel
  • 4.92 ml garlic, minced
  • 4.92 ml grated ginger
  • 29.58 ml vegetable oil
  • 4 tilapia fillets
  • flour, seasoned with
  • salt and pepper
  • 29.58 ml vegetable oil
  • green onion, thinly sliced for garnish

Directions

  1. To prepare the marinade, in a small bowl, whisk together orange juice and peeled garlic, ginger and oil.
  2. Place the fillets in a shallow dish and cover with the marinade for 20-30 minutes.
  3. Remove the tilapia from the marinade and reserve it.
  4. Dredge the fillets in seasoned flour to coat shaking off excess.
  5. Heat 2 tbs oil in a large saute pan over medium high heat and add tilapia and cook until lightly golden 3-4 minutes per side and then remove from the pan.
  6. Add remaining marinade to the pan bring to a boil and cook for 1 minute, reduce heat and simmer until it has a glaze consistency, 3-4 minutes.
  7. Pour the sauce over the tilapia and garnish with green onions.
