Very moist and great flavor! I will be making these often. I might even up the amount of ginger (we really like our ginger!) Made for Fall 2011 PAC game.
Soft and delicious! I feel they could use more ginger (I used dried so that's probably why) and next time I will add a teaspoon of nutmeg see what that does. Maybe raisins too for the batch after the next batch. We will be eating these for a while! Soooo good!! Thank you.
Delicious and easy to make. I use 2 1/2 tsps of powdered ginger, and add 1/2 tsp of mixed spice to give it a really punchy flavour.
Excellent! I heaped my Tb of fresh minced ginger a bit and thought it came out just perfect, though hubby said it could still use more ginger. The only other change I made was to use unrefined (brown) sugar.

The flavors in these muffins are unbeliveable!
The next time I make these muffins I would fill the batter to the rim. They did not raise much.
Don't worry if the batter is runny it means nothing.

I reduced the sugar to 1/2 cup. These muffins have a good taste. The dough was liquid, more than usual. But still the muffins looked great and rised. Thanks Slocan Cook :) Made for Cookbook tag game
