Ginger Lime Fish Parcels

  1. Cut carrot into thin long strips.
  2. Divide bok choy between foil squares. Top with fish fillets, carrot and pepper.
  3. Combine ginger, lime juice, honey, and sesame oil in a small bowl.
  4. Drizzle a little on each packet.
  5. Fold foil over the top, seal ends; place on baking tray.
  6. Bake at 375-400* about 15 minutes or until fish is cooked through.
  7. Serve topped with sliced green onions, if desired.

Light healthy fish. This was easy to put together and cook on the grill. Cut the veggies neatly for a nice appearance.
